The FSA's food safety system in one folder
The SFBB book — officially called the Safer Food Better Business pack — is the Food Standards Agency's food safety management system designed for small independent food businesses. It is a structured folder containing everything you need to comply with food hygiene law: diary pages, cleaning schedules, temperature logs, and a 4-weekly review form. It covers the same HACCP principles that large manufacturers use, but in a practical, checklist-based format that works in a small kitchen.
The pack comes in versions for different business types: caterers (restaurants, cafes, takeaways, pubs), retailers (shops, delis, markets), childminders, and care homes. Every section of the SFBB book
Safe methods: A section explaining cross-contamination, cleaning, chilling, cooking, and management. This is the reference section your team reads to understand why the checks exist.
Daily diary: The largest section. Opening checks, problems encountered during the day, and closing notes. This is where most of the daily recording happens.
Cleaning schedule: What needs cleaning, how often, who does it, and a sign-off box for each task. Your EHO checks this for completion during every inspection.
4-weekly review: The mandatory monthly check that your system is working. Are records complete? Are temperatures within range? Are staff following procedures? Missing reviews are the most common reason for rating drops.
Supplier and training records: Where your food comes from and who is trained to handle it. Keep supplier lists and staff certificates here.
The SFBB book, without the paper
