Why thorough restaurant cleaning matters for your hygiene rating
Cleaning is the single biggest factor in your Food Hygiene Rating Scheme score. The FSA confidence-in-management scoring includes cleaning as a standalone criterion. An otherwise well-run kitchen can drop from a 5 to a 3 rating on cleaning alone — and a 3 rating is visible to every customer searching your premises on the FSA website.
Counter-intuitively, the areas an EHO is most likely to scrutinise are not the ones you scrub daily. They head straight for the can opener blade, the ice machine interior, the extraction canopy filters, the bin store, and the mop sink area. These are the sites where neglect shows fastest and biofilms develop unnoticed.
Implementing a complete restaurant cleaning programme
Divide cleaning into three tiers: in-service cleaning (wipe-as-you-go, spill response), end-of-shift cleaning (full surface sanitising, floor washing, equipment disassembly), and periodic deep cleaning (extraction systems, behind fixed equipment, ceiling and wall washing, drainage). Each tier needs its own checklist and sign-off procedure.
