Cold Holding Food Poster: Safe Temperatures and Time Limits for Displayed Food

Why cold holding is a high-risk control point

Cold food on display — buffet items, salad bars, deli counters — sits outside refrigeration for extended periods. UK food safety law requires cold food to be held at or below 8°C, though best practice targets 5°C or below. Every hour food spends above 8°C accelerates bacterial growth, and by the time a customer complains, the damage is already done.

A frequently overlooked allowance: under UK guidance, cold food can be held above 8°C for up to four hours during service on a single occasion. After that four-hour window, any remaining food must be discarded — it cannot be rechilled and re-served. Most operators do not know this flexibility exists, or they abuse it by rechilling food that has already exceeded the window.

How to use this poster

Managing cold holding across service periods safely

Print and display near your buffet counters, pass-through fridges, or any area where cold food is displayed. Train staff to check and record display temperatures at least every two hours during service. Use a clean, calibrated probe thermometer — infrared thermometers only measure surface temperature and give false reassurance with cold food.

Label food with the time it went on display. If you use the four-hour flexibility rule, mark a clear discard time.
