Why corrective action records are the backbone of HACCP compliance
A HACCP plan without corrective actions is a wish list, not a food safety system. When a critical limit is breached — a fridge hits 9°C, a cooking temperature falls short, an allergen cross-contact occurs — what you do next defines whether your business prevented harm or merely documented a failure.
The counter-intuitive truth: a well-documented corrective action actually strengthens your EHO inspection. It proves your HACCP system is alive and responsive, not a folder of unchecked boxes. An inspector would rather see three properly handled deviations than a flawless but clearly fictitious temperature log.
Using this corrective action plan in your food safety management system
For every deviation, record: what was the critical limit, what was the actual reading, what immediate action was taken (disposal, re-cooking, quarantine), who authorised it, and what preventive measure will stop it recurring. Sign and date every entry.
Review corrective action logs at your monthly management meeting. Patterns reveal systemic weaknesses — repeated fridge failures point to equipment replacement, not more corrective actions. Corrective action errors that undermine your HACCP plan
Recording actions without root cause. "Disposed of food and turned fridge down" does not explain why the fridge warmed up. Was the door left open? Is the seal damaged? Is the compressor failing? Without root cause, corrective actions are temporary patches.
