Why deep cleaning matters for food safety and your hygiene rating

Routine daily cleaning keeps your kitchen operational, but deep cleaning is what prevents the gradual build-up of grease, food debris, and biofilm that daily wiping cannot reach. Under the Food Hygiene Rating Scheme, the "cleanliness and condition of facilities and building" accounts for 25% of your score. An EHO will look behind equipment, inside extraction canopies, under shelving, and at floor-wall junctions — the areas that daily cleaning typically misses.

Counter-intuitively, the kitchen areas that look clean are often the most contaminated beneath the surface. Stainless steel worktops wiped down daily can harbour bacteria in microscopic scratches and joins. The NSF International found that seemingly clean food contact surfaces in commercial kitchens tested positive for Listeria monocytogenes at a rate that surprised even the researchers. Deep cleaning reaches the gaps that daily wiping cannot.

How to use this checklist

Implementing deep cleaning in your kitchen's annual schedule

Schedule deep cleaning at least quarterly, with more frequent sessions for high-volume operations. This checklist breaks the kitchen into zones — ceilings and high-level surfaces, walls, floors and drains, refrigeration units, cooking equipment, extraction, dry storage, and staff areas. Assign each zone to a team member or external contractor and sign off each section on completion.

Common deep cleaning oversights that EHO inspectors will find

The most commonly missed areas during deep cleaning are the undersides of equipment — the area beneath fryers, combi ovens, and prep tables where grease and food debris accumulate over months. Drain covers and floor gratings are another blind spot: lifting them during deep cleaning often reveals build-up that contributes to odour and pest attraction. Finally, ice machines are frequently excluded from deep cleaning schedules because they "only hold frozen water." In reality, the internal surfaces can develop biofilm and mould, particularly around the water inlet and dispensing chute.
