Duck Cooking Temperature Chart: Safe Temperatures for Every Duck Preparation

Why duck sits in a grey area between poultry and red meat for food safety purposes
Duck is technically poultry, but in UK kitchens it is often served pink — particularly breast. This creates a HACCP challenge because the FSA's default poultry guidance says cook to 70°C for 2 minutes. Yet duck breast cooked to 70°C through is widely considered overdone, and the industry norm accepts medium-rare service.
The distinction that matters: duck breast is a whole muscle cut. Like beef steak, the interior is effectively sterile — campylobacter and salmonella sit on the surface. Searing kills surface pathogens, which is why seared duck breast served pink is considered safe when prepared correctly. Minced or processed duck products must reach full pasteurisation temperatures, no exceptions.
Your HACCP plan must explicitly address duck. An EHO who sees pink duck on the pass will check that your documentation justifies the decision with science, not tradition.
Using the duck temperature chart in your kitchen and HACCP documentation
Post this chart on the grill and sauce sections. For duck breast served pink, document your searing procedure: surface must reach at least 70°C during searing, and the bird must come from an assured supply chain. Record probe checks for every batch.
Duck legs and confit must reach full pasteurisation — 70°C for 2 minutes core temperature or equivalent. Duck offal, particularly liver, carries additional hepatitis risk and must be cooked thoroughly to 75°C core temperature with no pink remaining.
Whole duck presents a particular challenge: the breast may be done while the leg joint is still undercooked. Probe the inner thigh joint — this is the last part to reach temperature.
