Fish Temperature Chart: Safe Cooking Temperatures for Every Type of Seafood

Why fish safety involves more than just cooking temperature
Fish presents a different risk profile from meat and poultry. The primary hazards are not always killed by cooking — histamine (scombroid poisoning) in oily fish like tuna and mackerel is heat-stable. If the fish was temperature-abused before cooking, no amount of heat makes it safe. Storage temperature matters as much as cooking temperature.
Parasites are the other fish-specific risk. Anisakis, a parasitic worm found in many wild-caught species, can cause severe gastrointestinal illness. Freezing at -20°C for at least 24 hours kills anisakis — this is why the FSA requires wild fish intended for raw or lightly cooked consumption to be frozen first. Your supplier must confirm this in writing.
For shellfish, the risk shifts: biotoxins from algal blooms are heat-stable, and vibrio bacteria thrive in warm-water oysters. Source your shellfish from classified beds and keep the tags for 12 months — the EHO will check.
Using the fish temperature chart in your seafood HACCP plan
Post this chart at the fish section and on the pass. Different fish categories have different endpoints: white fish fillets flake at around 56-60°C (visual cue, probe to confirm), while shellfish like mussels and clams are done when the shell opens — discard any that remain closed.
For sushi and raw preparations, the temperature chart shifts from cooking to storage and sourcing. Verify supplier freeze records, hold at or below 5°C until service, and apply a strict 24-hour shelf life from thawing. Log receipt temperatures — reject fish delivered above 5°C.
