Food Hygiene Inspection Checklist UK: Self-Audit Before the EHO Walks Through the Door

Why the EHO inspection is not something you can cram for at the last minute
A Food Hygiene Rating Scheme inspection is scored across three areas: hygienic food handling (including preparation, cooking, re-heating, cooling, and storage), cleanliness and condition of facilities and building (including layout, ventilation, hand washing facilities, and pest control), and management of food safety (your SFBB or HACCP documentation, records, and staff training evidence). All three must be solid — weakness in one area drags down your overall rating.
EHOs typically inspect on a risk-based frequency: every 6 months for high-risk businesses, every 12 months for medium-risk, and every 24 months for low-risk. But they can — and do — turn up unannounced at any time. If your paperwork is not current on the day they arrive, you cannot fix it retrospectively.
The counter-intuitive reality: most businesses fail on management of food safety — the paperwork — not on visible cleanliness. An EHO will ask to see three months of temperature logs, training records, and your SFBB diary. If these do not exist or have gaps, you will score lower regardless of how spotless the kitchen looks.
Using the inspection checklist for your pre-inspection self-audit
Work through the checklist methodically, once per month. Start at the back door (deliveries, waste, pest control) and walk the entire premises, finishing with the paperwork. Score each item honestly — this is not about making yourself feel good, it is about finding problems before the EHO does.
For every "no" or "needs improvement", assign a responsible person and a deadline. Fix structural issues (broken tiles, missing coving, damaged seals) immediately — these are fixed penalty items. Close paperwork gaps the same week — every day without a temperature log is a day you cannot prove compliance.
Keep completed checklists in a folder. When the EHO arrives and sees a history of honest, dated self-audits with corrective actions, it signals a mature food safety culture.
