Good Manufacturing Practice is the baseline for all accredited food production standards including BRC, SALSA, and retailer codes of practice. A GMP audit is not a nice-to-have — it is a prerequisite for supplying most major UK retailers and food service operators. Failures in GMP are the most common reason for audit non-conformance and can lead to delisting.

Counter-intuitively, the most frequent GMP failure is not a hygiene breach — it is documentation gaps. Incomplete cleaning records, missing calibration certificates, and training logs without sign-off dates account for more non-conformances than physical contamination. Your paperwork is as important as your production floor.

How to use this checklist

Conducting a thorough GMP audit

Work through each section systematically: external areas and building fabric, internal layout and segregation, personnel facilities and hygiene, equipment condition and calibration, cleaning and chemical control, pest management, waste handling, and documentation review. Each item should be scored and any non-conformance categorised as critical, major, or minor.

Conduct GMP audits at least quarterly, with monthly walk-throughs of high-risk areas. Rotate auditors so fresh eyes catch issues that routine familiarity blinds you to.
