Why freezer temperature monitoring matters for food safety and waste reduction

Your freezer must operate at -18°C or below by law. Above this threshold, enzymatic and oxidative processes continue — slowly but steadily degrading food quality, texture, and safety. A freezer running at -15°C may look fine but is silently shortening your storage life by weeks.

The counter-intuitive fact: freezing does not kill bacteria. It merely suspends them. When you defrost food, any pathogens present before freezing resume activity immediately and multiply faster because the food's cell walls have been ruptured by ice crystals, releasing nutrients bacteria feed on. This is why you must cook defrosted food within 24 hours.

EHOs check both your freezer temperature records and your labelling system. Unlabelled frozen containers are a common inspection failure — if you cannot prove what it is and when it was frozen, it fails traceability requirements.

How to use this chart

Using this freezer chart in your kitchen storage routine

Position this chart on or near every freezer unit. Staff should check and record freezer temperatures at least once daily — ideally at opening when the unit has been undisturbed overnight. If your freezer has a defrost cycle, check temperature immediately after the cycle completes, as this is when it is most vulnerable.

The chart also serves as a stock rotation guide. Cross-reference the recommended maximum storage times with your date-labelling system. Common mistakes

Freezer mistakes that compromise food safety

Overfilling the freezer. Air needs to circulate around stored items to maintain consistent temperature. A packed freezer with blocked vents can develop warm spots of -10°C or higher while the thermostat reads -18°C because the sensor is in a different location.

Freezing food that has already been defrosted. You may refreeze defrosted food ONLY if it has been cooked first. Raw food defrosted and refrozen has gone through two thaw cycles, each creating bacterial growth windows.

Ignoring freezer burn. While freezer burn itself is not a food safety hazard, it indicates temperature fluctuation — the very thing that reduces your safe storage time. If you see ice crystals or dry patches on stored food, your freezer is cycling above -18°C.
