Fridge Layout Poster: Correct Food Storage Order to Prevent Cross-Contamination

Why fridge layout matters for preventing cross-contamination

The order you store food in your fridge is not a matter of convenience — it is a critical control point. Raw meat dripping onto ready-to-eat food below is one of the most common causes of campylobacter and salmonella outbreaks in UK commercial kitchens. EHO inspectors routinely check fridge organisation and will issue improvement notices for incorrect storage hierarchy.

The counter-intuitive fact: cooked food stored above raw meat is not automatically safe. Condensation from cooling cooked food can drip downward and pick up pathogens from raw meat packaging on its way, then re-condense elsewhere. Always cover everything, regardless of shelf position.

The correct top-to-bottom order is: ready-to-eat foods (top), then cooked meats, then raw fish, then raw whole cuts of red meat, then raw poultry (bottom). Raw poultry always goes at the bottom because it carries the highest pathogen load and the lowest safe cooking temperature threshold.

Using this fridge layout poster in your commercial kitchen

Display on the wall directly above or beside every fridge unit in your kitchen. Colour-code your shelves to match the poster zones — red tape for raw meat shelves, green for ready-to-eat, blue for fish. This gives staff an instant visual check even without reading the poster.

Include this poster in every staff induction. New kitchen team members often come from different kitchens with different layouts. A standardised reference ensures everyone follows the same system from day one. Common mistakes

Fridge storage errors that EHOs spot immediately

Storing eggs on the top shelf. Raw shell eggs should be stored below ready-to-eat food because shells can carry salmonella on their surface. Keep eggs in their original packaging and on a middle shelf.

Storing unwashed vegetables above ready-to-eat food. Soil on root vegetables carries clostridium perfringens and other spore-forming pathogens. Unwashed produce belongs in a separate drawer or on a lower shelf.

Overcrowding shelves so that air cannot circulate. A fridge packed wall-to-wall can have temperature differences of 4-6°C between the front and back. Leave gaps between containers and never block the cooling vents.
