Why HACCP auditing is not just for certification
Your HACCP plan is a living document — or it should be. Article 5 of retained Regulation 852/2004 requires you to review your HACCP procedures whenever you change a product, process, or ingredient. Most UK food businesses never update their HACCP plan after the initial version, and an EHO or third-party auditor will spot this immediately. A HACCP plan referencing equipment you replaced three years ago is worse than no plan at all — it tells the auditor your system is decorative, not operational.
Counter-intuitively, an over-complicated HACCP plan with too many CCPs is a red flag. A true CCP is a step where you can apply control AND where loss of control results in an unacceptable health risk. If your plan has 15 CCPs, you have almost certainly confused CCPs with PRPs or operational PRPs. Auditors know this and will challenge you on every single one.
Using this audit checklist for HACCP plan review
Complete this audit at least annually, and immediately after any significant change. Work through the seven Codex principles in order: hazard analysis, CCP determination, critical limits, monitoring procedures, corrective actions, verification procedures, and documentation. For each principle, confirm the evidence exists and is current.
Involve the HACCP team — not just the technical manager alone. The best verification comes from the operators who work at each CCP. Ask them whether the monitoring frequency is realistic.
