Why kitchen safety is integral to food business operation

Safety oversights that lead to preventable accidents
Using a wet cloth to handle hot trays or pans. A damp cloth conducts heat instantly and can cause a steam burn more severe than direct contact with the hot surface. Use dry, folded cloths only and replace them as soon as they become damp.
Leaving knives in the washing-up sink submerged in soapy water. The next person reaches in blind and grabs a blade. Knives must be washed individually and placed blade-down in a designated knife rack immediately after use.
Storing heavy items on high shelves. A catering-sized tin of tomatoes falling from above head height can cause serious injury. Store heavy items at waist level and light items above. This is a simple rule that is violated in most kitchens.
