In a commercial kitchen, freezer-burned stock is waste, and waste hits your bottom line directly.
The counter-intuitive fact: the fastest way to induce freezer burn is to put warm food directly into the freezer. The temperature difference creates a vapour pressure gradient that pulls moisture out of the food at an accelerated rate. Cool food to below 5°C in the fridge before transferring to the freezer — not because of food safety (the freezer will cool it fast enough) but to prevent the moisture loss that causes freezer burn.
Freezer burn is also an indicator of temperature cycling. If you see significant freezer burn across multiple items, your freezer is likely fluctuating above -18°C during defrost cycles or from door openings. The same temperature instability that causes freezer burn also shortens safe storage life, because enzymatic activity resumes during warm periods.

Stacking unfrozen items on top of each other. Until food is fully frozen, stacked items freeze together into a solid block and the centre may not reach -18°C for hours. Spread items in a single layer until frozen solid, then stack for storage.
