Why retail food safety differs from kitchen food safety
Retail food safety often fails at the customer-facing display, not in storage. Customers handle products, return chilled items to ambient shelves, and children touch everything at their height level. Your back-of-house processes may be perfect, but the shop floor introduces variables your kitchen never faces — and an EHO inspects both with equal scrutiny.
The counter-intuitive reality: the products most likely to be out of date on a retail shelf are not the short-life items you check daily. They are the ambient long-life products — sauces, tinned goods, dry ingredients — that staff assume "last forever" and therefore never rotate. A customer finding an 18-month-out-of-date jar of pesto on your shelf is as damaging to your reputation as a food safety breach.
Using this daily retail checklist in your shop routine
Print and complete at the start of each trading day, before customers arrive. Walk the entire shop floor methodically: check every chilled display reads below 5°C, verify date codes on short-life and ambient products, inspect customer-facing surfaces, and confirm allergen signage is present and correct. Initial each section — do not bulk-tick at the end.

Mistakes in retail food safety that lead to enforcement
Checking only the front row. Customers push newer stock to the front and older stock to the back. Your date-check routine must dig behind the first row on every shelf.
Forgetting the checkout area. Impulse-buy confectionery and snacks at the till are food products under the same regulations. If they are within date but sun-bleached from the window, they are not of the "nature, substance or quality demanded" and breach the Food Safety Act 1990.
No allergen signage. Loose bakery items, deli counters, and pick-and-mix displays require clear allergen information. A missing allergen sign is an immediate EHO non-compliance.
