Why recipe cards need safety data, not just ingredients
The most common cause of inconsistent food safety across a multi-site or multi-chef kitchen is not poor training. It is recipe cards that list ingredients and method but omit critical control points: core cooking temperature, hot-hold minimum, cooling time limit, and allergen flags. A chef following a method-only card may produce a dish that looks correct but has spent 90 minutes in the danger zone during cooling because the card never specified a blast chill step.
An EHO observing your kitchen will compare what is written on the recipe card against what staff are doing. If your card says "cook until done" rather than "core temperature 75°C for 30 seconds," you have a HACCP documentation gap that will be noted.
Building standardised recipe cards for your entire menu
Input each dish with ingredients, quantities, method steps, and critical data: CCP cooking temperature and duration, allergen flags, storage instructions, and portion weight. Print cards in a consistent format and laminate them for kitchen use. Review cards whenever ingredients or suppliers change to ensure allergen data remains current.
Digital SFBB stores all recipe cards in a central library accessible from any device. Staff pull up the latest version on a tablet at their station. When a supplier updates a specification, affected recipe cards are flagged automatically so you can review before the next service.
Card errors that create kitchen inconsistency
Writing method steps from memory rather than observing the actual workflow — what you think happens and what happens at 8pm on a Saturday are often different. Omitting the cooling procedure entirely. Using brand names instead of generic ingredient categories for allergen identification, which becomes a problem when you change supplier.
