Food retail presents unique hazards that restaurant checklists do not address. Customer-facing displays are accessible to the public, meaning damaged packaging, misplaced items, and temperature abuse from open cabinets are daily risks. A torn packet of raw meat leaking onto ready-to-eat products on the shelf below is a cross-contamination event that can go unnoticed for hours.

What many retailers miss: ambient shelf-stable products are not zero-risk. Damaged packaging on tins, jars, or vacuum-sealed goods can allow bacterial ingress. A dented tin with a compromised seam may support Clostridium botulinum growth — a risk most retail staff are never trained to recognise. Your daily walkthrough must include packaging integrity checks across all product types, not just chilled.

Start with pre-opening temperature checks on all chilled and frozen display units. Verify date labelling and rotation on all short-shelf-life products. Walk the ambient aisles checking for damaged packaging, spillages, and misplaced items. Mid-shift, recheck chiller temperatures — open-front cabinets can drift during busy trading hours. End of day, do a full date check and remove anything expiring before the next trading day.
