Why vacuum sealing changes the food safety equation
Vacuum sealing extends shelf life — but it also introduces risks that many kitchens overlook. Removing oxygen inhibits aerobic spoilage bacteria, but it creates ideal conditions for anaerobic pathogens, particularly Clostridium botulinum. This is why vacuum-packed fish must be removed from its packaging before thawing: the anaerobic environment plus temperature abuse creates a botulism risk.
