Why canned food date confusion creates unnecessary waste and hidden risk
Best-before dates on canned food are about quality, not safety. A tin of beans years past its best-before may taste flat but is unlikely to harm anyone — provided the can is intact, not swollen, and not rusted. UK food businesses throw away tonnes of perfectly safe canned food every year through misunderstanding this distinction.
The real risk is not the date on the label but the condition of the can. A dented, rusted, or bulging tin is dangerous regardless of the date — bulging indicates Clostridium botulinum growth, which produces a toxin that can be fatal. Your EHO will check your dry store for damaged cans. One bulging tin in your inventory is a major non-compliance.
This chart distinguishes between different can types and contents: high-acid foods (tomatoes, fruit) have shorter realistic shelf lives than low-acid foods (meat, vegetables) because acid corrodes the can lining over time.
Using the canned food dates chart in your stock rotation and inspection routine
Post this chart in your dry store. Train staff to check cans on delivery (reject dented or rusted tins), during stock rotation (FIFO — first in, first out), and at monthly deep-clean inspections. Any can that is swollen, leaking, or hisses when opened must be discarded immediately and the incident logged.
For high-acid canned goods, apply a 12-18 month practical limit from purchase regardless of the printed date. Mark the purchase date on each tin with a permanent marker. For low-acid goods, 2-5 years is generally safe if cans are intact and stored below 25°C.
