Why meat slicers are one of the highest-risk items in your kitchen
A commercial meat slicer has more potential bacteria harbourage points than almost any other piece of kitchen equipment. The blade guard, carriage, product grip and thickness plate all collect food debris that supports pathogen growth — particularly Listeria monocytogenes, which can survive and multiply at fridge temperatures.
Research by the FSA has found that meat slicers in UK deli counters can carry bacterial loads higher than a toilet seat when not properly cleaned between uses. An EHO can request to see your slicer cleaning records as part of your SFBB pack. If the slicer itself looks dirty, you have already failed the visual inspection before records are even discussed.
Cleaning sequence your team should follow every shift
Display the poster directly above or adjacent to the slicer station. The process is: unplug the machine, remove the blade (wearing a cut-resistant glove), disassemble all removable parts, wash in hot soapy water, rinse, then apply food-safe sanitiser with the correct contact time. Do not skip the blade removal step — wiping the blade in situ leaves food residue between the blade and the guard.

Errors that compromise slicer hygiene
