Fridge Organisation Chart: A Systematic Approach to Professional Food Storage
A comprehensive fridge organisation system covering shelf allocation, container types, labelling standards, and FIFO rotation. Designed for busy UK commercial kitchens to maintain SFBB compliance under pressure.
Why systematic fridge organisation matters for food safety and kitchen efficiency
Disorganised fridges do not just slow down service — they create food safety risks. When staff cannot find ingredients quickly, they leave fridge doors open longer, causing temperature spikes. When containers are unlabelled, food gets forgotten and used past its safe date. An organised fridge is a safer fridge.
The counter-intuitive fact: the most dangerous shelf in your fridge is the door. Door shelves can be 3-5°C warmer than the main compartment and experience the most temperature fluctuation from repeated opening. Never store high-risk foods like dairy, eggs, or cooked meats in door shelves — reserve them for condiments, drinks, and sealed shelf-stable items only.
EHOs look for a working FIFO system (First In, First Out). They will check date labels and expect newer stock to be placed behind older stock. If they find expired items at the front of a shelf with newer items behind, it signals the system is not being followed during busy service.
Implementing this fridge organisation system in your commercial kitchen
Start by auditing every fridge in your kitchen. Empty each unit completely, check all date labels, discard anything expired, and clean all surfaces before reloading according to the chart. This one-time reset pays for itself in reduced waste within weeks.
Assign a specific staff member as fridge lead for each shift. Their job is to verify the organisation matches the chart at three points: after prep, after lunch service, and at closing. With digital SFBB, these checks become quick phone-based tasks with photo evidence — far more reliable than paper checklists that get ticked without being read.
Templates that work alongside this organisation chart
Use this chart together with our Fridge Layout Poster for the correct top-to-bottom storage hierarchy, and our Fridge Temperature Chart to ensure every shelf stays within safe range. For daily monitoring, pair with a Daily Temperature Log.
