Why deep cleaning is different from daily cleaning

Your daily cleaning schedule keeps surfaces visibly clean and safe for service. Deep cleaning addresses what accumulates over time: grease behind extraction hoods, biofilm inside ice machines, carbonised deposits on oven interiors, and dust in ventilation grilles. These are not cosmetic issues — they affect food safety, fire risk, and equipment efficiency.

The fact that surprises most operators: kitchen surfaces that look clean to the naked eye can still harbour enough bacteria to fail an ATP swab test. Grease films invisible to the eye support bacterial colonisation. An EHO carrying out a detailed inspection will check extraction canopy edges, floor-wall junctions, and equipment undersides — places your daily clean never reaches.

Scheduling deep cleans across your kitchen operation

Organise tasks by frequency: weekly deep cleans for extraction filters and floor drains, monthly for behind heavy equipment and inside refrigeration units, quarterly for ceiling vents and behind fixed shelving. Schedule deep cleans outside service hours and rotate responsibility among senior team members so the knowledge is not held by one person.

Common mistakes

Deep clean errors that leave contamination behind

Using the same cloths and mops for deep cleaning as for daily cleaning — deep cleaning disturbs entrenched contamination and requires dedicated tools to avoid spreading it. Focusing on visible surfaces while ignoring overheads and undersides. Using the wrong chemical concentration, which makes surfaces look clean while leaving bacterial biofilms intact beneath.
