Restaurant Health Inspection Checklist: Complete Pre-Inspection Audit for Your EHO Visit
A thorough checklist covering every area an EHO will inspect during your food hygiene assessment. Walk through it before any inspection to catch issues before they affect your rating.
Why pre-inspection checks protect your hygiene rating
Approximately 40 percent of all food business inspections in the UK result in a rating that requires improvement. Most of those outcomes could have been avoided with a structured pre-inspection audit. EHO officers do not announce routine inspections, so the only way to be ready is to maintain inspection readiness at all times — and to walk through a comprehensive checklist regularly as if the EHO were already at the door.
The critical fact most operators overlook: an EHO does not just inspect your kitchen. They review your paperwork first — your SFBB folder, temperature logs, training records, and supplier lists — and what they find in your documentation often determines how thoroughly they inspect your premises. Poor records invite a deeper physical inspection.
Running a mock inspection across your entire operation
Assign a senior staff member — ideally someone who did not set up the systems themselves — to walk through every item as if they were the inspecting officer. Check documentation completeness and accuracy, then walk the premises physically: fridge temperatures, date labelling, cleaning standards, handwashing facilities, pest proofing, and structural condition. Record every finding and set a deadline for corrective action.
Digital SFBB helps by making your entire food safety management system visible from a single screen. Your pre-inspection auditor can review temperature histories, cleaning records, and training logs without chasing paper. Any gaps found can be assigned as tasks with deadlines tracked to completion.
Inspection errors that cost ratings points
Assuming that because the kitchen is clean, the paperwork does not matter — documentation counts for up to 25 percent of your score under the Food Hygiene Rating Scheme. Not training front-of-house staff to answer basic food safety questions, which an EHO may ask at random. Failing to check the customer-facing areas where allergen information must be prominently displayed.
