Why SOPs are a legal expectation in the UK food industry
Under Regulation (EC) 852/2004, all UK food businesses must have documented procedures based on HACCP principles. SOPs are how you demonstrate this in practice. An EHO will not simply ask if you have procedures — they will observe whether your team follows them. A written SOP that nobody uses is worse than no SOP at all, because it shows you know what to do but chose not to do it.
The food industry has a particular challenge: high staff turnover. SOPs are your institutional memory. When your best chef leaves, do their methods leave with them? Documented SOPs mean the next person can step in without dropping standards.
Building SOPs that work in a real food business
Write SOPs with the person doing the task in mind. Use clear language, not management jargon. Include photos where possible — a picture of the correct colour-coded chopping board goes further than three paragraphs describing it. Test every SOP: have someone unfamiliar with the task follow it and see where they get stuck.
